MAJOR FOCUS:
Responsible for the overall cleanliness and sanitation of the Kitchen, and stewarding areas. Oversee the daily tasks of all stewarding employees. Responsible for hiring, training, supervising and counseling all stewarding employees.
ESSENTIAL FUNCTIONS:
* Coordinate daily with the Executive Chef and Kitchen chefs concerning kitchen cleaning and cleaning projects, walk-in boxes, hoods, etc., and coordinates in particular with the Banquet Manager concerning equipment needs for any larger catering functions.
* Coordinate and direct all work assignments in the Stewarding Department to ensure the organization, sanitation, inventory and control of all china, glassware, and silverware items.
* Responsible for the supervision, scheduling, developing and training of all Stewarding Department employees in order to achieve budgeted food and beverage revenues.
* Assure that all dishwashing machinery is operated in accordance with manufacturers operating instructions and properly cleaned at the end of the day/shift and is serviced periodically.
* Control payroll through proper employee scheduling, in accordance with the weekly cover forecast, adjust daily schedules to compensate for absences as required.
* Responsible for the monthly accurate inventory taking of china, glass and silver items, for review by the Director of Food and Beverage.
* Responsible for completion and timely submission of annual employee evaluations.
ADDITIONAL FUNCTIONS:
* May be required to participate in daily service operation.
* Performs other duties as assigned.
REQUIREMENTS/EDUCATION:
* Prior experience as Stewarding Supervisor in a quality convention hotel or larger banquet/conference facility with annual Food and Beverage sales in excess of $5 million.
* High School diploma or equivalent required.
* Quality and detail oriented, well organized, reliable, cooperative
* Effective communication skills, both oral and written; ability to logically and independently plan, organize and complete work; initiative; well-developed interpersonal skills; ability to set and achieve high standards of performance; ability to make progress on multiple assignments under time constraints; and ability to travel to various locations on business.
* Some knowledge of Spanish helpful
